From a duckmaster to a tequila butler, there’s a professional at hand to satisfy even the most demanding guest.

Gone are the days when luxury hotels could assume guests would be satisfied with a smile from the receptionist and some insider advice from a long-serving concierge. As major brands battle for business, they’re promoting increasingly niche services and employing staff with highly specialised – or peculiar – skills to set their properties apart and create a loyal customer base.

 

The most impressive positions seem to be the quirky few that are offered by a miniscule number of properties internationally. At the Peabody Hotel in Memphis, ‘duckmaster’ Anthony Petrina is in charge of what is one of the residence’s main attractions: its flock of ducks. The 25-year-old takes responsibility for the overall care and wellbeing of the five North American mallards and is most visible in his role during the twice-daily March of The Peabody Ducks. At 11am each morning, he accompanies the ducks as they march along a red carpet from their rooftop Royal Duck Palace to the marble fountain in the lobby. John Philip Sousa’s King Cotton March plays as the procession takes place. The procedure is repeated at 5pm, when the ducks return to their palace and retire for the evening. It sounds made up, but it happens.

 

The hotel has employed a duckmaster of sorts since 1940, but recently created animal-related roles take a more conspicuously ecological approach. At the Shangri-La Barr Al Jissah Resort & Spa in Oman, the hotel’s turtle care project employs a dedicated turtle ranger who ensures turtle nests are sheltered from any threats and that guests and local communities are informed of the plight of the species through educational talks and viewings. Similarly, Jean-Michel Cousteau Resorton the island of Vanua Levu in Fiji employs a full-time resident marine biologist, Johnny Singh, who educates guests about local ecosystems and also undertakes research projects and local outreach programmes to ensure the resort is as environmentally sustainable as possible. At more than 20 Fairmount hotels around the world, meanwhile, beekeepers are employed to maintain apiaries that pollinate local plants and provide local honey for onsite restaurants and bars. It’s a win-win initiative for the chain, with the brand seen to support the local environment and the locally sourced honey also meeting a growing demand from luxury consumers for hyper-local food.

Of course, caring for animals is all well and good but many guests have chosen to visit a luxury hotel because they want to take care of themselves. At the Akaryn Samui hotel in Thailand, a female ‘sunbed supervisor’ is on hand to ensure residents don’t get sunburned. Those who avail of her services will firstly be prepped and buffed in the hotel spa – exfoliation and application of signature suncare brands are meant to aid the development of an even, rich tan – before they take to their lounger. The sunbed supervisor will then time guests’ sun exposure, adjust their shade level and reapply suncream after swimming, or whenever needed, to ensure they tan to a satisfactory level.

Those with an aversion to sunbathing may instead prefer cosying up in a room in the Taj Boston. During the colder months, a ‘fireplace butler’ is available to ensure guests make the most of their suites’ fireplaces. Described, grandly, by the hotel as ‘wood sommeliers’ these butlers can suggest what type of woods are best from the hotel’s dedicated wood menu, and will of course light the fire if required. The chain is expanding the role and fireplace butlers are now available to assist guests at the Taj Palace Marrakech, although presumably there’s less call for the service there.

Guests at the Ritz-Carlton, Dove Mountain in Tucson can warm themselves up via the services of Richard Gutierrez. The property’s official tequila butler, he can often be found by the pool, dispensing free samples of tequilas and tequila-based drinks. His services are something that could well be deployed at some point by Melissa Rosenfield, Viceroy Anguilla’s director of vibe and VIP services. Explaining her unique position, she says: “I’m the social director, the party planner, the camp counsellor and the good-time Charlie. I plan all programming and handle all celebrities and VIPs and just manage the ‘cool factor’ there. The original job description was just like, ‘make sure the music and lighting is cool.'”

And when the time comes for guests to take in their surroundings, there are employees who can help with that too. At Raffles Grand Hotel d’Angkor in Siem Reap, resident historian Mouth Saravann can inform visitors about the hotel’s heritage, the history of nearby Angkor Wat and the distressing past of Cambodia as a whole. Sister property Le Royal Monceau in Paris offers the services of an art concierge, who is qualified to guide guests through the innumerable cultural pursuits on offer in the city. Likely popular with American tourists eager to trace their lineage, the services of ‘tartan butler’ Andy Fraser, an employee of The Balmoralhotel in Edinburgh, have recently been made available to guests. He assists them in tracking down their family tartan from the thousands of traditional recognised tartans using the Scottish Register of Tartans and can arrange for a kilt to be made in Edinburgh’s most established kilt shop, Kinloch Anderson.

Art and food are two of the main draws for Florence visitors, and after a day exploring the former, you’ll need plenty of the latter. Should you wish to dine like the Medici, this list highlights five sumptuous dinners not to be missed while in the Tuscan capital, a slice of La Dolce Vita guaranteed with every one.

A trip to Florence is not complete without a visit to Acqua Al 2, home of the Blueberry Steak. The combination strikes people as unusual, as does the menu’s other fruit-inspired meat dishes, but the meal is so delicious, so perfectly balanced, you have to wonder how no one ever thought of it before. Be sure to preface your steak with the pasta sampler. The kitchen staff will serve three (generous) samples of what they think are the best tasting pastas that night, meaning you are almost guaranteed not to repeat, though everything is so well crafted, that wouldn’t be the worst thing to happen.

Buca Mario

“Buca” in Italian refers to a basement level bar or restaurant, and Buca Mario is one of Florence’s finest. As you step down into the restaurant (watch your head), you will be greeted not by a dim, quiet cavern, but a subterranean world of bright light and bustling energy.

Here try a spectacular Ribollita, the traditional Tuscan vegetable soup that incorporates crusty bread right into the base. The real draw, though, is the famous Bistecca alla Fiorentina (Florentine Steak), a 2.5+ pound piece of Chianina beef served between medium and rare. Even if that Tuscan specialty holds no appeal for you, Buca Mario will still consider you family: everyone receives a free apron on the way out.

Pandemonio

The name translates to pandemonium, but within the stucco walls of this Bellosguardo area establishment, there is only the excitement that comes from being surrounded by good food and a loving staff. The menu, all seasonally based, is prepared by “Mamma”, who comes to each individual table to advise you on your choices. Try another delicious example of the Bistecca alla Fiorentina, as well as the Tuscan specialty soup Pappa al Pomodoro, and whatever you do, save room for one of the best cheesecakes you will ever taste, Mamma’s own recipe.

Osteria Vini e Vecchi Sapori

Reservations are key here, not only because of popularity, but because the trattoria seats only a handful of people at a time. The small size is ultimately a benefit, providing an intimate atmosphere and the chance to talk with the owners, a husband and wife duo that prepares everything from scratch. They write the menu by hand each day, deciding what’s fresh in the markets and taking into account what they feel like preparing, “tutto quello che vogliamo.” With strong luck, the pappardelle covered in a rich wild boar sauce will be in their thoughts the night of your visit, but whatever their decision, you will be lucky.

Trattoria 13 Gobbi

Trattoria 13 Gobbi is a maze of cozily lit rooms, each evoking a different aspect of Tuscany. The caprese salad is an excellent starter: the house made buffalo mozzerella will melt in your mouth, and the tomatoes are crisp and fresh. There are many delectable dishes to choose from at 13 Gobbi, including a pappardelle with boar sauce to rival that of Vini e Vecchi Sapori, but the one item that keeps patrons returning again and again is the penne pomodoro. Served in a steaming glass bowl, the penne is covered in marinara blended with spices and clumps of mozzerella. Simple presentation, stunning effect.

Trattoria 13 Gobbi

So enchanted were we with the dish that we asked our waiter for the recipe, which he gladly wrote it down on a napkin. He warned us, however, that he’d been an employee of 13 Gobbi for three years and had attempted to make it several Sundays a month. Not once was he successful in recreating the magic. All the more reason to come back!

Bonus: for dessert on the town, try Gelateria dei Neri

This small shop serves a wide variety of absolutely delicious gelato. For the fruit lovers, there are flavors like strawberry, melon, and chocolate orange, and for those like myself who hunger for decadence, the tiramisu and Nutella will more than satisfy.

It is tough to describe our six glorious days at Castello Di Reschio in Umbria, Italy, without resorting to clichés and big words that sound like overstatements. Awesome. Amazing. Surreal. Idyllic. Exquisite.

But when we review our images, videos and stories from Di Reschio, the one thing that has become even clearer over time is the feeling that we were transported to some unspecified luxurious time period between ancient history and tomorrow. A perfect “time is standing still” moment, offering relaxation and pampering, yet managing to surprise and delight at every turn.

With the estate itself a testament to how beautifully structures can age, combined with the extraordinary attention to detail in the restoration, and topped with every modern amenity one could wish for, it all appeared – and still does – almost too beautiful and perfect to be true.

We kept thinking that it resembled a movie set, yet there wasn’t a single fake or pretentious item in the place. Everything felt that it belonged here, and somehow always had belonged, even if reality proved otherwise.


The back story of this incredible estate and the family that runs it, is just as unbelievable and romantic as any fantasy we could conjure up. In 1994, Count Antonio Bolza and his wife, Angelika, purchased Castello di Reschio, a 2,700-acre estate in the hills of Umbria, Italy. They set out to restore and renovate the disused farmhouses on the estate that dates back to 1202.

Over time, the Count’s son Benedickt Bolza (now known as Count Bolza) graduated from architecture school and joined the family operation, taking over the planning, design and renovation.

He met his future wife, Nencia (of the princely Corsini family of Florence), at Castello di Reschio where she was hired by his parents in 1998 to paint decorative trompe l’oeil murals.

Eventually, the couple took over the estate’s largest castle as the home for themselves and their now five children. It was the most challenging to renovate, says Count Bolza, but it is beyond amazing. The couple has no regrets about the painstaking work they’ve done on it and offer tours for the guests.


So far, they have renovated about 25 villas on the estate, catering to an international elite client base of buyers and renters.

We stayed at the Palazzo that sleeps 10. The staircase in the centre of the house alone took our breath away. And the attention to detail in absolutely everything on the entire estate. From custom-design (by Count Bolza) furniture to incredible amenities including Ortiga Sicilia toiletries that we completely fell in love with.

On arrival, at lunchtime, our house was bustling with cooking and soon a delicious lunch was served at the huge table. This was a precursor to the astonishing mealtimes we were to enjoy throughout our stay.

Swimming pools, gyms, tennis, cooking lessons at your own house, and eating, of course, eating. Everything as fresh as can be and everything produced locally.


As we were focusing on doing as little as possible, we were delighted to be spectators at Conte Bolza’s Tuesday evening dressage performance. As he and his white horse moved elegantly around the paddock, we were seated under a maharaja tent, and served Italian hors d’oeuvres and wine.
The entire setup felt like we were witnessing an old-world European aristocratic tradition, and we were probably not too far wrong. Dressage does have deep European roots dating back to before Renaissance, and horses have played a vital role in this former frontier fief situated on the border between the former Papal States and the Grand Duchy of Tuscany.

And within a five-minute drive from our Palazzo was the estate’s restaurant, Osteria – that’s how large the estate is – where chef Marco Pellegrini creates the Di Reschio cuisine.

Unpretentious, delicious, fresher than fresh. Italian. Perfect bright-red vine ripened tomatoes, buffalo mozzarella, basil, pasta, gazpacho, bread, olive oil, balsamic vinegar, salt and chilli, and wine. You get the idea. We think we have found our heaven on earth and it is called Castello Di Reschio.

Few visitors to Australia venture to the Blue Mountains, one of the most beautiful areas of the world. Only 31 miles from Sydney, the region is known as the Grand Canyon of Oz.

Perched on the edge of a cliff here is Lilianfels, a restored 1889 country mansion. Now a five-star hotel, the resort is set amidst two acres of manicured gardens. The facility, which overlooks the mountains, offers an ideal escape for nature lovers, romantics and gourmets.

You can enjoy afternoon tea or cocktails in front of a roaring fire in the cozy main lounge and dinner at the newly refurbished, award-winning Darleys Restaurant, which boasts Old World charm, an impressive wine list and inventive, seasonal Australian cuisine. Maybe because it doesn’t advertise or because it’s set in a 100-acre virgin forest in the foothills of the Himalayas (just a 45-minute flight from Delhi), most people have never heard of this luxury spa resort, which focuses on wellness and balance.

“Ananda” means happiness and guests find it in the 78 rooms, suites and villas, all with private balconies overlooking the sacred Ganges River, Rishikesh Valley or the Himalayas. The Viceregal Suite has an outdoor hot tub and the largest hotel terrace in India. Don a kurta (a white cotton tunic and top) and try early-morning yoga, relax at the pool, take a fitness class or indulge at the 24,000-square-foot spa.

Whitewater raft the Ganges, trek to a sacred Hindu temple, visit the wild elephants of Rajaji National Park or try an elephant photo safari. You can also kayak, fish or take a lesson from a golf pro on a six-hole par-three course with turf imported from the U.S. Dine like the Maharaja at any of Ananda’s six restaurants.

A short drive away is Rishikesh, where the Beatles trained in Transcendental Meditation. A chauffeur will escort you there to see a sunset aarti (religious ceremony) above the Ganges. Returning to Ananda in your limo, you’ll feel as though you’ve had a mystical experience. –Margie Goldsmith

South Africa is a game-lover’s paradise, though so many vehicles are often jockeying for position that it’s impossible to see the wildlife. Not so at Samara, which is nestled between an amphitheater of mountains in the malaria-free Eastern Cape’s Great Karoo, a 35-minute charter flight or three-hour drive from Port Elizabeth. Here you can get up close and personal with a few of the nine cheetahs that roam this 70,000-acre reserve. Several are collared with GPS transmitters, which gives you and your guides a chance to walk so close you can hear them breathing.

An animal lover who hoped to rejuvenate the land and create a self-sustaining ecosystem of game founded Samara Private Game Reserve 15 years ago. Besides the cheetahs, Samara has reintroduced herds of springbok, black wildebeest, zebra, oryx, eland, hartebeests, zebra, rhino and giraffes. Lions will be reintroduced in a separate area and, over time, elephants.

Thick bush surrounds most game lodges in Africa, but Samara’s 18 opulent and spacious suites provide pristine views for hundreds of miles. You can dine on fresh, locally sourced produce served with an excellent selection of South African wines. Samara also offers a traditional boma dinner, a candlelit feast beneath the Milky Way and Southern Cross with the chef grilling savory beef, chicken and fish. Visitors hoping to escape the hustle and bustle of Jaipur choose the new, all-suite Devi Ratn Resort, just 10 miles away in the Aravali hills. “Ratn” translates as “pure gemstones” and the lustrous gem-craft of Jaipur is omnipresent at the resort, reflected in the materials and details of the public spaces and accommodations. Romantic domes and arches rise everywhere, and delicate latticework creates intricate sun-splashed patterns on the ground.

A golf cart delivers you to one of 63 spacious suites, each with unique terrazzo flooring and traditional bay windows that offer perfect views of the Aravali hills. You might start the day by taking a two-minute walk down the resort driveway to stroll in the surrounding open fields. Later, after shopping and sightseeing in bustling Jaipur, you can relax poolside, watch the sunset or have a treatment at the Devi Spa by L’Occitane. End the day at the Vajra Restaurant, which serves delicious Indian and international cuisine and boasts panoramic views of the Aravali hills. A two-hour detour from Paris lands you in the Loire Valley, the site chosen by French kings and nobles for their châteaux. Most visitors tour the grand estates in day trips due to the scarcity of overnight lodging. However, you can sleep in a chateau instead of simply touring them.

Legendary Château de la Barre–which has been home to the Comte and Comtesse de Vanssay’s family since 1404–offers accommodations and fine dining. Each of five bedrooms in the manor house contains 18th century antiques, surrounded by bright and bold designer fabrics and wallpaper. En suite bathrooms are sleek and modern. Surprisingly, pets are allowed.

Hosts Guy and Marnie de Vanssay (Marnie is American) offer helpful, often intriguing suggestions for outings: a Renaissance lunch in Leonardo da Vinci’s home (June through September), driving a dream car around the famous nearby Le Mans racetrack, hot-air-balloon rides that depart directly from the château mornings and evenings. Other possibilities include bicycling, golfing at numerous courses, tennis and horseback riding.

Twice a week, the owners host a Grand Siècle Dinner in the 17th century dining room with family silver and crystal. On other nights, the evening meal is served in the billiard room. Daily afternoon tea is poured in the Salon Rose. Ask about gourmet picnics and wine tastings.

The château is near the tiny village of Conflans-sur-Anille in the Pays de la Loire region. The nearest airport is Tours, a one-hour drive. –Debi Lander

If you’re dreaming of Gauguin’s tropical paradise but lack time to visit Tahiti, Florida’s Little Palm Island Resort and Spa will fulfill your needs. Fly to Key West or Marathon Key and the resort staff will escort you via a 1930s-style wooden launch over to Little Torch Key. The five-acre private island is a rarely advertised secret and can be reached only by boat or seaplane.

Switch your shoes for flip-flops and relax in one of the 28 thatched-hut guest accommodations, each surrounded by lush greenery. They include secluded outdoor showers and full indoor baths, some with redwood tubs.

No children, no pets. Guests are asked to use their cell phones only in their bungalows, although the library maintains Internet and phone access.

The “Floribbean” three-meal plan offers the freshest of the fresh as the chef changes the menu selections daily. Sunsets are a big deal in the Keys, and Little Palm is home to an upscale Margaritaville-style cocktail hour. The resort caters to those celebrating special occasions and will artfully arrange candlelight dinners on a private beach.

Prior to 1988, the island thrived as a tiny fishing camp that President Harry Truman and other dignitaries visited. Today, Little Palm serves as a sanctuary where you can simply relax and do nothing. Snooze in one of the rope hammocks at the edge of the tranquil Gulf or on one of the chaise lounges scattered over the property. Feeling more active? Try kayaking, windsurfing or swimming in the freshwater pool.

Off-island options include diving Looe Key National Marine Sanctuary, the only living coral reef in North America; deep-sea fishing; and pole fishing from the docks. –Debi Lander

Chapel Hill, N.C., which has been called the “Southern part of heaven,” is well known for its mountaintop golf courses, tree-lined streets, acclaimed university and Tarheel’s basketball. Perhaps less well known but just as noteworthy is the nearby Fearrington House Inn and Restaurant.

Located in the village of Fearrington–10 minutes from Chapel Hill and 30 minutes from Raleigh-Durham International Airport–the English-inspired 32-room lodge boasts impressive credentials. This 640-acre resort–operating as a dude ranch since 1868 and owned by the in-residence Cote family since 1957–is set in stunning desert landscape. To the east are the Rincon Mountains, to the north are the majestic Catalina Mountains and to the south is the vast Saguaro National Park. Accommodations include casita and hacienda suites with kitchens, patios and fireplaces. Depending on the season, rates vary from $495 to $1,195 (double), which covers all meals and activities like horseback riding, swimming, tennis and guided nature hikes.

In recent years, most dude ranches have toned down the Wild West elan and made riding secondary to things like spas and golf. Not Tanque Verde, where the horses are the centerpiece and rodeo-themed lessons are available. Advanced riders head out for long, fast-paced lopes and gallops along desert trails lined with saguaro cacti and other Sonoran Desert sights. Less-adventuresome riders can saddle up for walk-rides on well-maintained trails, including some that go high into the mountains. The ranch has horses suited for beginners and experts plus well-supervised children’s rides and activities.

Breakfasts and lunches are sumptuous buffets while dinner is a sit-down meal with a daily menu. At least once a week, guests enjoy a nighttime cookout around campfires at the ranch’s cottonwood grove, where a cowboy crooner entertains.

The clientele, mostly couples and families, often includes foreign guests who come for a taste of the Old West. The ranch also accommodates groups and conferences. The drive from the airport (shuttle service available) takes 40 minutes. –Joe Sharkey

Lumeria’s developer, Xorin Balbes, describes the resort as an “educational retreat center” for travelers seeking a tranquil respite on Maui’s north shore, just outside Paia. The property has 24 well-appointed rooms and suites on six acres of tropical gardens with ocean vistas. Yoga classes, meditation sessions and other “wellness” programs are available, as are hiking, biking and water sports. The organic-cuisine menu features produce from Lumeria’s own gardens.

Balbes bought and lovingly transformed the secluded Maui property–which was built in 1909 as a convalescent center for sugar plantation workers–and opened it as a hotel last year. He said Lumeria caters to visitors “coming just to unplug and reground themselves” in a setting where traditional Maui culture, rather than the brassy beach culture, prevails.

“We have no televisions or telephones in the rooms, which enhances the restoration of creative energy,” said Balbes, an architectural conservator who is best known for restorations of venerable Los Angeles properties such as the 1926 home of Lloyd Wright Sowden, son of Frank Lloyd Wright.

Of course, there are limits to the solitude. “OK, we do have Wi-Fi,” Balbes admitted. “You have to stay somewhat connected if you’re going back to a job.” –Joe Sharkey
